Although tequila cocktails are my usual go-to, sometimes I find myself craving the rich and smoky flavors of Mezcal drinks!
This weekend, after a week of cold weather, the sun was finally shining, and I was itching for a taste of summertime. I called up my girlfriends, put my bartender skills to use, and shook up this Pineapple Mezcalita Recipe. Made with fresh pineapple juice and smoky Mezcal, one sip of this cocktail and you'll feel like you're on a tropical escape!
Ingredients

- Mezcal: use your favorite brand. Adds a nice, smoky flavor to the mix.
- Lime juice: freshly squeezed is always the best!
- Cointreau: or triple sec, essential in all the best Margarita recipes!
- Fresh pineapple juice: or store-bought, makes this drink fruity and sweet.
- Simple syrup: optional for added sweetness.
- Garnishes: Tajín (optional) for rimming and pineapple slices.

- Prep the glass
If you enjoy a coated rim, you'll want to prep your glass with Tajín first so you can enjoy your cocktail right after shaking it up! - Make the cocktail
In a cocktail shaker filled with ice, combine the required ingredients together. Give everything a good shake until the sides of the glass are nice and frosted. - Serve & Garnish
Pour your shaken mixture into your prepared glass, top with fresh ice and a slice of pineapple. Enjoy!

Serving this Pineapple Mezcal Margarita
This cocktail is best enjoyed with a Tajín-coated rim and a slice of pineapple to compliment the mix's flavors. Pineapple Mezcalita

Ingredients
- 1 ½ ounces Mezcal
- ½ ounce lime juice
- ¾ ounce Cointreau, or Triple Sec
- 2 ounces fresh pineapple juice
- ½ ounce simple syrup, optional
- Tajín, optional for rimming
- pineapple slices, for garnish
Instructions
Prep the glass:
- If you enjoy a spicy-rimmed glass, prep the rim of your glass by rubbing a lime wedge along the rim. Dip in Tajín seasoning, and set aside.
Make the cocktail:
- Add ice to the shaker, Mezcal, the lime juice, and Cointreau or Triple Sec, pineapple juice, and simple syrup (if using). Shake until the sides are fully frosted.
Serve:
- Fill your glass with ice, and pour the shaken mixture into the prepared glass. Garnish with a pineapple slice.
