Refreshing Mezcalita with Pineapple

Although tequila cocktails are my usual go-to, sometimes I find myself craving the rich and smoky flavors of Mezcal drinks!

This weekend, after a week of cold weather, the sun was finally shining, and I was itching for a taste of summertime. I called up my girlfriends, put my bartender skills to use, and shook up this Pineapple Mezcalita Recipe. Made with fresh pineapple juice and smoky Mezcal, one sip of this cocktail and you'll feel like you're on a tropical escape!

Ingredients

Everything you need to shake up this pineapple Mezcalita will be listed in the recipe card below, but before you make any swaps, see why each ingredient is needed:

  • Mezcal: use your favorite brand. Adds a nice, smoky flavor to the mix.
  • Lime juice: freshly squeezed is always the best!
  • Cointreau: or triple sec, essential in all the best Margarita recipes!
  • Fresh pineapple juice: or store-bought, makes this drink fruity and sweet.
  • Simple syrup: optional for added sweetness.
  • Garnishes: Tajín (optional) for rimming and pineapple slices.

How to Make a Pineapple Juice Mezcalita

Grab your shaker, and let's get shakin'! Here is how to make the best pineapple Mezcalita with a few additional tips in each step to ensure the best sip:

  1. Prep the glass
If you enjoy a coated rim, you'll want to prep your glass with Tajín first so you can enjoy your cocktail right after shaking it up!
  2. Make the cocktail
In a cocktail shaker filled with ice, combine the required ingredients together. Give everything a good shake until the sides of the glass are nice and frosted.
  3. Serve & Garnish
Pour your shaken mixture into your prepared glass, top with fresh ice and a slice of pineapple. Enjoy!

Serving this Pineapple Mezcal Margarita

This cocktail is best enjoyed with a Tajín-coated rim and a slice of pineapple to compliment the mix's flavors. Other fun garnish ideas include jalapeno slices for extra spice, dehydrated orange slices for additional citrusy flavor, or pineapple slices skewered through a cocktail pick for a fancy finishing touch.

What to Serve with This Cocktail

Keep the tropical vibes going by serving this drink with my Hawaiian pork tacos or Jamaican jerk chicken tacos, and top everything off with my fresh pineapple salsa for the ultimate flavor combination!
