This prickly pear margarita is vibrant, sweet, and almost too pretty to drink, and it's made with just 4 ingredients.

Margarita Recipe with Prickly Pear Syrup

Until recently, I've only ordered a prickly pear margarita at a bar because, tbh, prickly pear fruit intimidates me. Tobias, the bartender, once told me that a syrup exists, making this drink possible at home.

This recipe keeps it simple and super clean, just like my Classic Margarita recipe. It lets the bold color and sweet flavor shine. It's so vibrant that it's the cocktail people always ask for another round of, which is why I included pitcher-friendly measurements in the recipe. Trust me, you'll need them!

How to Make a Prickly Pear Margarita

Fill your cocktail shaker with ice and add blanco or silver tequila, triple sec or Cointreau, fresh lime juice, and that electric pink prickly pear syrup (exact amounts are in the recipe card below). Shake everything up vigorously until the sides are nice and frosty. Strain the mixture into your prepared glass over fresh ice, garnish with lime, and brace yourself for compliments.

Make It a Pitcher

When I've got people over, I'm not about to shake eight rounds while everyone else is halfway to tipsy. Not when this is so easy to scale up. Combine 1½ cups of tequila, 1½ cups of triple sec or Cointreau, 1 cup of fresh lime juice, and 1 cup of prickly pear syrup in a large pitcher. Add a couple handfuls of ice and refrigerate until it's cold. Bonus points if you serve it in a glass pitcher so that bright pink color gets the attention it deserves.

What to Serve with This Margarita

I love this marg with Mexican chicken tacos and a scoop of cilantro lime rice, or something heartier like short rib tacos. It's a sweet, smooth cocktail, so it balances out rich or salty bites well. And the color alone makes any dish look amazing!

Ingredients

  • 1 ½ ounces tequila
  • 1 ½ ounces triple sec or Cointreau
  • 1 ounce fresh lime juice
  • 1 ounce prickly pear syrup

Instructions

Prep:

  • If you enjoy a salted glass, prep the rim of your glass by rubbing a lime wedge along the rim. Dip in tequila salt, and set aside.

Make the marg:

  • Fill a cocktail shaker with ice and add tequila, triple sec or Cointreau, lime juice, and prickly pear syrup. Shake vigorously, more than you think, until the sides are fully frosted.

Serve:

  • Add fresh ice to the prepared glass and strain the margarita into it. You can also use the ice from the shaker; this is up to you.
  • Garnish with a wedge of lime.

Notes

Make it a pitcher, serves 8 by combining 1 ½ cups tequila, 1 ½ cups triple sec or Cointreau, 1 cup fresh lime juice, and 1 cup of prickly pear syrup in a pitcher. Add a couple of handfuls of ice and refrigerate. When ready to serve, mix well and pour over a prepared glass.
