Blend the dragon fruit and a little water until you get a thick puree. Pour it through a sieve into the shaker, holding back any solids and using the back of a spoon to press the juice through. For a thicker texture, pour it directly into the shaker.
If you enjoy a rimmed glass, prep the rim of your glass by rubbing a lime wedge along the rim. Dip in tequila salt, and set aside.
Shake:
To the shaker with the dragon fruit juice, add ice, tequila, triple sec, lime juice, and simple syrup. Shake vigorously for 20 to 30 seconds.
Serve:
Pour the dragon fruit margarita into the prepared glasses and garnish with a lime wedge.
Notes
Use any additional dragonfruit purée for another cocktail or smoothie.
